Instructions
- In a large saucepan, combine the diced mangoes, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the mangoes are soft and the sugar has dissolved. This should take about 15 minutes.
- Use a potato masher or an immersion blender to mash the mangoes to your preferred consistency. If you like a chunkier jam, don't mash them too much.
- In a separate small bowl, mix the pectin with 2 tablespoons of water to create a slurry. Ensure it's well mixed and there are no lumps.
- Stir the pectin slurry into the mango mixture. Mix well to ensure it's evenly distributed.
- Continue cooking the jam over medium heat, stirring frequently, for about 30 minutes. The jam should thicken and reach your desired consistency.
- Remove the saucepan from the heat and allow the jam to cool for 10 minutes.
