Ingredients

Ripe mangoes
2 large, peeled and diced
Honey
1/4 cup (adjust to taste)
Lime juice
2 tablespoons, freshly squeezed
Water
1/2 cup
Lollipop sticks

Instructions

  1. Begin by peeling and dicing the ripe mangoes into small chunks to make blending easier.
  2. In a blender, combine the diced mangoes, honey, lime juice, and water. Blend until smooth and creamy, ensuring there are no chunks of mango left.
  3. Taste the mango mixture and adjust sweetness by adding more honey if desired.
  4. Pour the smooth mango mixture into lollipop molds or small paper cups, leaving a bit of space at the top for expansion as they freeze.
  5. Insert a lollipop stick into the center of each mold or cup, making sure it's securely placed.
  6. Carefully place the molds or cups in the freezer and freeze for at least 4 hours, or until completely firm.
  7. Once frozen, gently remove the mango lollipops from the molds or cups. If they are difficult to remove, run warm water over the outside of the mold for a few seconds.
  8. Enjoy immediately, or store in a zip-top bag in the freezer for up to a month.
