Ingredients

Original recipe serves 2

Flour tortillas
2 large
Vegetable oil
1 tablespoon
Salt
1/4 teaspoon
Lime juice
1 tablespoon
Cilantro
2 tablespoons, chopped
Jalapeno
1 small, finely chopped (seeds removed for less heat)
Red onion
1/4 cup, finely chopped
Cheddar cheese
1 cup, shredded
Ripe mango
1 large, peeled and diced

Instructions

  1. In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to allow the flavors to meld.
  2. Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
  4. Spread half of the mango mixture over the cheese, ensuring even coverage.
  5. Top with the second tortilla and press down gently.
  6. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
  7. Carefully flip the quesadilla and cook for another 2-3 minutes, or until the cheese is melted and the other side is golden brown.
  8. Remove from the skillet and repeat the process with the remaining ingredients to make the second quesadilla.
  9. Cut the quesadillas into wedges and serve hot with the zesty lime crema on the side.
