Sweet and Spicy Mango Quesadilla

Ingredients
- 2 large Flour tortillas
- 1 tablespoon Vegetable oil
- 1/4 teaspoon Salt
- 1 tablespoon Lime juice
- 2 tablespoons, chopped Cilantro
- 1 small, finely chopped (seeds removed for less heat) Jalapeno
- 1/4 cup, finely chopped Red onion
- 1 cup, shredded Cheddar cheese
- 1 large, peeled and diced Ripe mango

Instructions
- In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to allow the flavors to meld.
- Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil.
- Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
- Spread half of the mango mixture over the cheese, ensuring even coverage.
- Top with the second tortilla and press down gently.
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
- Carefully flip the quesadilla and cook for another 2-3 minutes, or until the cheese is melted and the other side is golden brown.
- Remove from the skillet and repeat the process with the remaining ingredients to make the second quesadilla.
- Cut the quesadillas into wedges and serve hot with the zesty lime crema on the side.
