Ingredients

Original recipe serves 4

Cooking oil
2 tablespoons
Salt and pepper
to taste
Cilantro
2 tablespoons, chopped
Lime juice
2 tablespoons
Honey
1 tablespoon
Soy sauce
3 tablespoons
Ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Onion
1 medium, diced
Red bell pepper
1 large, diced
Mango
1 ripe, diced
Shrimp
1 pound, peeled and deveined

Instructions

  1. In a bowl, whisk together the soy sauce, honey, lime juice, minced garlic, grated ginger, and chopped cilantro. This will be your stir-fry sauce. Set it aside.
  2. Heat the cooking oil in a wok or large skillet over medium-high heat.
  3. Add the diced onion and red bell pepper to the skillet. Sauté them until they start to soften, about 3-4 minutes.
  4. Add the shrimp to the skillet. Cook them until they turn pink and are cooked through, about 2-3 minutes per side. Be careful not to overcook the shrimp as they can become tough.
  5. Pour the prepared stir-fry sauce over the shrimp and vegetables in the skillet. Toss well to coat everything evenly.
  6. Add the diced mango to the skillet. Gently stir to combine, ensuring the mango pieces are heated through but still retain their shape, about 1-2 minutes.
  7. Season the dish with salt and pepper to taste.
  8. Serve the Mango Shrimp Stir-Fry hot, over steamed jasmine rice or with a side of your choice. Garnish with additional cilantro if desired.

Tips

  • 💡 For a more tropical twist, you can also add chunks of pineapple. If you prefer a spicier dish, add a chopped jalapeño or a dash of chili flakes to the stir-fry sauce.
