Tropical Mango Shrimp Stir-Fry

- 2 tablespoons Lime juice
- 1 tablespoon Honey
- 3 tablespoons Soy sauce
- 1 tablespoon, grated Ginger
- 2 cloves, minced Garlic
- 1 medium, diced Onion
- 1 large, diced Red bell pepper
- 1 ripe, diced Mango
- 1 pound, peeled and deveined Shrimp

Instructions
- In a bowl, whisk together the soy sauce, honey, lime juice, minced garlic, grated ginger, and chopped cilantro. This will be your stir-fry sauce. Set it aside.
- Heat the cooking oil in a wok or large skillet over medium-high heat.
- Add the diced onion and red bell pepper to the skillet. Sauté them until they start to soften, about 3-4 minutes.
- Add the shrimp to the skillet. Cook them until they turn pink and are cooked through, about 2-3 minutes per side. Be careful not to overcook the shrimp as they can become tough.
- Pour the prepared stir-fry sauce over the shrimp and vegetables in the skillet. Toss well to coat everything evenly.
- Add the diced mango to the skillet. Gently stir to combine, ensuring the mango pieces are heated through but still retain their shape, about 1-2 minutes.
- Season the dish with salt and pepper to taste.
- Serve the Mango Shrimp Stir-Fry hot, over steamed jasmine rice or with a side of your choice. Garnish with additional cilantro if desired.
Tips
- For a more tropical twist, you can also add chunks of pineapple. If you prefer a spicier dish, add a chopped jalapeño or a dash of chili flakes to the stir-fry sauce.
