Mango Sticky Rice

Mango Sticky Rice is a beloved Thai dessert that combines the creamy richness of coconut milk, the sweetness of ripe mangoes, and the delightful chewiness of sticky rice. Often enjoyed at festivals and special occasions, this dish embodies the essence of Thai cuisine—balancing flavors and textures in a harmonious way. Served warm or at room temperature, it's a tropical treat that transports you to the sandy beaches of Thailand with every bite.

Ingredients

Sticky rice
1 cup
Ripe mangoes
2, peeled and sliced
Coconut milk
1 cup
Sugar
1/3 cup
Salt
1/4 teaspoon
Fresh mint leaves
for garnish
Sesame seeds
for garnish

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over high heat for 20 minutes, or until it is tender and cooked through.
  3. While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is fully dissolved and the mixture is heated through. Remove from heat and set aside.
  4. Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Mix well to coat the rice with the sauce.
  5. To serve, place a portion of the sticky rice on a plate. Arrange the sliced mangoes on top of the rice. Drizzle with the remaining coconut sauce and sprinkle with sesame seeds.
  6. Garnish with fresh mint leaves for a pop of color and flavor. Serve warm or at room temperature.
