Ingredients

Original recipe serves 8

Fresh mint leaves
a handful for garnishing
Whipped cream
to serve
Cornstarch
1 tablespoon
Lemon juice
1 tablespoon
Mangoes
3, ripe and juicy
Salt
1/4 teaspoon
Granulated sugar
1/2 cup
Unsalted butter
1/2 cup, cold and cut into small pieces
All-purpose flour
1 1/2 cups

Instructions

  1. In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs. Add 2-3 tablespoons of cold water and pulse until the dough comes together.
  2. Transfer the dough to a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. On a lightly floured surface, roll out the dough into a circle slightly larger than your tart pan. Transfer the dough to the tart pan and press it into the bottom and sides. Trim any excess dough.
  5. In a blender or food processor, puree 2 mangoes until smooth. Add lemon juice and cornstarch and blend again until well combined.
  6. Pour the mango mixture into the tart shell and spread it evenly.
  7. Bake for 20-25 minutes, or until the crust is golden brown and the filling is set. Remove from the oven and let it cool completely.
  8. Slice the remaining mango into thin slices and arrange them on top of the tart.
  9. Serve the mango tart chilled, topped with whipped cream and fresh mint leaves.

Tips
