Servings: 24 cookies
Ingredients
- Unsalted butter
- 1 cup, softened
- Powdered sugar
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- All-purpose flour
- 2 cups
- Cornstarch
- 1/4 cup
- Salt
- 1/4 teaspoon
- Sprinkles
- to taste (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 3-4 minutes.
- Add the vanilla extract and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt until thoroughly combined.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until a soft dough forms. If the dough seems too crumbly, you can add a teaspoon of cold water to help it come together.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them about 2 inches apart.
- If desired, gently press down on each cookie with a fork to create a crisscross pattern or leave them round for a more traditional look.
- Bake in the preheated oven for 15-20 minutes, or until the edges of the cookies are lightly golden but the centers remain pale.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Optional: Decorate with sprinkles while the cookies are still warm for an extra touch of color and sweetness.
- Enjoy these delicious mantecaditos with a cup of coffee or tea!
