Ingredients
- Peanuts
- 2 cups, roasted and unsalted
- Sugar
- 1 cup
- Unsalted butter
- 1/2 cup, melted
- Vanilla extract
- 1 teaspoon
- Salt
- 1/4 teaspoon
Instructions
- Begin by placing the roasted peanuts in a food processor. Pulse until they are finely ground, resembling a coarse flour or peanut butter consistency.
- Add the sugar, melted butter, vanilla extract, and salt to the food processor. Process the mixture until it is well combined and starts to clump together.
- Prepare a square baking dish (approximately 8x8 inches) by lining it with parchment paper, allowing some overhang for easy removal.
- Transfer the peanut mixture into the prepared baking dish. Using a spatula or your hands, press the mixture down firmly to create an even layer, ensuring there are no air pockets.
- Cover the dish with plastic wrap or foil and refrigerate for at least 2 hours, or until the Mantecol is firm to the touch.
- Once firm, remove from the refrigerator and lift the Mantecol out of the dish using the parchment paper. Cut into squares or bars using a sharp knife.
- Serve and enjoy your homemade Mantecol! These can be stored in an airtight container in the refrigerator for up to a week.
