With its roots in early North American settlements, where maple syrup was a precious commodity, this dish is a testament to culinary ingenuity and a celebration of seasonal flavors.

Ingredients

Pork chops
4 (1-inch thick)
Water
4 cups
Pure maple syrup
1/2 cup
Kosher salt
1/4 cup
Garlic cloves
4, smashed
Bay leaves
2
Black peppercorns
1 tablespoon
Olive oil
2 tablespoons
Fresh thyme (optional)
1 teaspoon, for garnish

Instructions

  1. In a large pot, combine the maple syrup, kosher salt, black peppercorns, bay leaves, smashed garlic, and water. Bring to a boil, stirring until the salt is fully dissolved.
  2. Remove the pot from heat and allow the brine to cool completely to room temperature.
  3. Once cooled, add the pork chops to the brine, ensuring they are fully submerged. Cover the pot and refrigerate for at least 2 hours, or up to 24 hours for a deeper flavor.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Remove the pork chops from the brine, pat them dry with paper towels, and brush both sides with olive oil.
  6. Grill the pork chops for approximately 7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.
  7. Let the pork chops rest for 5 minutes before serving to allow the juices to redistribute.
  8. Garnish with fresh thyme if desired, and serve with your favorite sides.

Tips

  • 💡 For an extra layer of flavor, consider adding a splash of apple cider vinegar to the brine.
  • 💡 If you prefer oven-baked pork chops, preheat your oven to 400°F (200°C) and bake the chops for about 20-25 minutes, flipping halfway through.
