Pork chops

Water
4 cups
Pure maple syrup

Instructions

  1. In a large pot, combine the maple syrup, kosher salt, black peppercorns, bay leaves, smashed garlic, and water. Bring to a boil, stirring until the salt is fully dissolved.
  2. Remove the pot from heat and allow the brine to cool completely to room temperature.
  3. Once cooled, add the pork chops to the brine, ensuring they are fully submerged. Cover the pot and refrigerate for at least 2 hours, or up to 24 hours for a deeper flavor.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Remove the pork chops from the brine, pat them dry with paper towels, and brush both sides with olive oil.
