- Water
- 4 cups
- Pure maple syrup
- 1/2 cup
- Kosher salt
- 1/4 cup
- Garlic cloves
- 4, smashed
- Bay leaves

- Black peppercorns
- 1 tablespoon
- Olive oil
- 2 tablespoons
- Fresh thyme (optional)
- 1 teaspoon, for garnish
Instructions
- In a large pot, combine the maple syrup, kosher salt, black peppercorns, bay leaves, smashed garlic, and water. Bring to a boil, stirring until the salt is fully dissolved.
- Remove the pot from heat and allow the brine to cool completely to room temperature.
- Once cooled, add the pork chops to the brine, ensuring they are fully submerged. Cover the pot and refrigerate for at least 2 hours, or up to 24 hours for a deeper flavor.
- Preheat a grill or grill pan to medium-high heat.
- Remove the pork chops from the brine, pat them dry with paper towels, and brush both sides with olive oil.
- Grill the pork chops for approximately 7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.
