This dish offers a perfect balance of sweet and savory, with tender, roasted acorn squash enveloped in a beautiful glaze of pure maple syrup and butter. Deliciously caramelized, it's an inviting side dish that exudes the spirit of the season. Acorn Squash, native to North and Central America, was a staple in Native American diets and has been enjoyed for centuries. Our recipe pays homage to this heritage, inviting you to savor its rich history and flavor.

Servings: 4

Ingredients

  • Acorn squash (1 medium-sized)
  • Maple syrup (1/4 cup)
  • Butter (2 tablespoons)
  • Salt (1/4 teaspoon)
  • Black pepper (1/4 teaspoon)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half, lengthwise from stem to end. Use a spoon to scoop out and discard the seeds.
  3. Arrange the squash halves cut-side up on a baking sheet.
  4. In a small saucepan, combine butter and maple syrup. Heat over medium, stirring until the butter has melted. Stir in the salt and black pepper.
  5. Generously brush the maple butter mixture over the cut sides of the squash, making sure to fill the center cavity.
  6. Roast the squash in the preheated oven for about 1 hour, or until the squash is fork-tender and the glaze has caramelized into a beautiful golden brown.
  7. Allow the squash to cool for a few minutes before serving to enhance the flavors.
