Maple Glazed Roasted Parsnips

This elevated take on a traditional root vegetable dish introduces a delicious harmony of flavors. The parsnips, with their slightly sweet, nutty profile, are roasted to perfection, achieving a tender texture and a beautifully caramelized exterior. They are then tossed in a luscious glaze made with pure maple syrup, adding a layer of rich sweetness that complements the earthiness of the parsnips. This dish, with its origins in British cuisine, makes a delightful side for any meal, bringing a touch of sweet sophistication to your dining table.

Serves 4

Ingredients

Parsnips
1 kg, peeled and quartered
Olive oil
2 tablespoons
Pure maple syrup
3 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat your oven to 200°C (180°C fan) mark 6.
  2. Place the peeled and quartered parsnips in a large roasting tin.
  3. Drizzle the parsnips with olive oil, ensuring they are well coated.
  4. Roast the parsnips in the preheated oven for 15 minutes.
  5. After 15 minutes, remove the roasting tin from the oven. Drizzle the parsnips with pure maple syrup, tossing them until they are evenly coated in the syrup.
  6. Return the parsnips to the oven and roast for another 15 minutes, or until they are tender and have achieved a rich, caramelized exterior.
  7. Season the parsnips with salt and black pepper to taste before serving. Be sure to toss them once more to evenly distribute the seasonings.

Tips

  • 💡 For an added touch of flavor, consider adding a sprinkle of dried herbs such as thyme or rosemary before the final roast.
  • 💡 Ensure the parsnips are evenly coated in both the olive oil and the maple syrup to achieve the most flavor and the best caramelization.
