Mediterranean Marinated Vegetable Salad

Ingredients
- 1/2 teaspoon, or to taste Salt

- 2 cloves, minced Garlic
- 1 tablespoon Dijon mustard
- 1/4 cup Red wine vinegar
- 1/2 cup Olive oil
- 1/4 cup, finely chopped Fresh parsley
- 1 cup, crumbled Feta cheese
- 1 cup, pitted and sliced Olives
- 1 small, thinly sliced Red onion
- 2 cups, halved Cherry tomatoes
- 2 medium, diced Cucumbers
- 2, seeds removed and diced Bell peppers

Instructions
- In a large serving bowl, combine the diced bell peppers, cucumbers, halved cherry tomatoes, thinly sliced red onion, sliced olives, crumbled feta cheese, and finely chopped parsley.
- In a separate small bowl, prepare the vinaigrette. Whisk together the minced garlic, Dijon mustard, red wine vinegar, olive oil, salt, and freshly ground black pepper until well combined.
