1/2 teaspoon, or to taste
Black pepper
1/2 teaspoon, freshly ground
Garlic
2 cloves, minced
Dijon mustard
1 tablespoon
Red wine vinegar
1/4 cup
Olive oil
1/2 cup
Fresh parsley
1/4 cup, finely chopped
Feta cheese
1 cup, crumbled
Olives
1 cup, pitted and sliced
Red onion
1 small, thinly sliced
Cherry tomatoes
2 cups, halved
Cucumbers
2 medium, diced
Bell peppers
2, seeds removed and diced

Instructions

  1. In a large serving bowl, combine the diced bell peppers, cucumbers, halved cherry tomatoes, thinly sliced red onion, sliced olives, crumbled feta cheese, and finely chopped parsley.
  2. In a separate small bowl, prepare the vinaigrette. Whisk together the minced garlic, Dijon mustard, red wine vinegar, olive oil, salt, and freshly ground black pepper until well combined.
  3. Drizzle the vinaigrette over the vegetable mix in the large bowl. Toss gently until all the vegetables are evenly coated in the dressing.
  4. Cover the salad and refrigerate for at least 1 hour. This allows the vegetables to soak up the flavors of the vinaigrette, enhancing the overall taste of the salad.
