Mediterranean Marinated Vegetable Salad

- 2 cloves, minced
- Dijon mustard

- Red wine vinegar
- 1/4 cup
- Olive oil
- 1/2 cup
- Fresh parsley
- 1/4 cup, finely chopped
- Feta cheese
- 1 cup, crumbled
- Olives
- 1 cup, pitted and sliced
- Red onion
- 1 small, thinly sliced
- Cherry tomatoes
- 2 cups, halved
- Cucumbers
- 2 medium, diced
- Bell peppers
- 2, seeds removed and diced
Instructions
- In a large serving bowl, combine the diced bell peppers, cucumbers, halved cherry tomatoes, thinly sliced red onion, sliced olives, crumbled feta cheese, and finely chopped parsley.
- In a separate small bowl, prepare the vinaigrette. Whisk together the minced garlic, Dijon mustard, red wine vinegar, olive oil, salt, and freshly ground black pepper until well combined.
- Drizzle the vinaigrette over the vegetable mix in the large bowl. Toss gently until all the vegetables are evenly coated in the dressing.
