Ingredients
- Salt and pepper (to taste)
- Garlic (2 cloves, minced)
- Dijon mustard (1 tablespoon)
- Red wine vinegar (2 tablespoons)
- Olive oil (1/4 cup)
- Fresh parsley (1/4 cup, chopped)
- Feta cheese (1/2 cup, crumbled)
- Olives (1/2 cup, pitted)
- Red onion (1/2, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Cucumbers (2, thinly sliced)
- Bell peppers (1 red, 1 yellow, 1 green, thinly sliced)
Instructions
- In a large bowl, combine the bell peppers, cucumbers, cherry tomatoes, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
- Pour the dressing over the vegetables and toss to coat evenly.
