Marquesitas

Ingredients
- 2 cups All-purpose flour
- 2 whole Eggs
- 2 cups Milk
- 1/4 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Salt
- for greasing skillet Butter
- to taste Nutella
- to taste, shredded Edam cheese

Instructions
- In a large bowl, combine flour, eggs, milk, sugar, vanilla extract, and salt. Whisk until the batter is smooth and free of lumps.
- Heat a non-stick skillet over medium heat and lightly grease it with butter.
- Pour a ladleful of batter into the skillet, swirling it around to evenly coat the bottom. This will form your marquesita.
- Cook until the edges of the marquesita start to lift from the skillet, this should take about 2 minutes. Then, carefully flip it over and cook the other side for another minute or two.
- While still in the skillet, spread a generous layer of Nutella over the surface of the marquesita and sprinkle with shredded Edam cheese.
- While the marquesita is still warm and flexible, roll it up tightly. Repeat these steps with the remaining batter and fillings.
- Serve the marquesitas immediately while they are still warm and crispy.
