Mashed Potatoes and Gravy

Ingredients
- 2 pounds, peeled and cubed Potatoes
- 1/2 cup (1 stick), divided Unsalted butter
- 1 cup, warmed Milk
- 1 teaspoon, or to taste Salt
- 1/2 teaspoon, or to taste Black pepper
- 2 tablespoons All-purpose flour
- 2 cups Beef broth

Instructions
- In a large pot, cover the peeled and cubed potatoes with water and bring to a boil over high heat.
- Reduce the heat to medium and simmer until the potatoes are tender when pierced with a fork, about 20 minutes.
- Drain the potatoes and return them to the warm pot. Add 1/4 cup of unsalted butter, warmed milk, salt, and pepper. Mash until smooth and creamy.
- To prepare the gravy, melt the remaining 1/4 cup of butter in a small saucepan over medium heat. Stir in the flour and cook for 1 minute to remove the raw flour taste.
- Slowly whisk in the beef broth and continue to cook and stir until the gravy thickens and comes to a simmer, about 5 minutes.
- Taste and adjust the seasoning of the gravy with additional salt and pepper if needed.
