Fluffy Matcha Pancakes

Transport yourself to a delightful Japanese tea garden with these Fluffy Matcha Pancakes. With their vibrant green hue and the distinct, rich flavor of matcha green tea, these pancakes are not only a visual treat but an explosion of earthy sweetness in every bite. Matcha, a powdered green tea used traditionally in Japanese tea ceremonies, lends a smooth and slightly bittersweet flavor that contrasts beautifully with the sweet maple syrup drizzled on top, making this dish a perfect balance of flavors.

Serves 4

Ingredients

All-purpose flour
1 cup
Matcha powder
2 tablespoons
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Sugar
2 tablespoons
Milk
1 cup
Egg
1, large
Vanilla extract
1 teaspoon
Unsalted butter
2 tablespoons, melted (plus extra for greasing)
Maple syrup
as needed for serving

Instructions

  1. In a large bowl, whisk together the all-purpose flour, matcha powder, baking powder, salt, and sugar. This is your dry mix.
  2. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. This is your wet mix.
  3. Pour the wet mix into the dry mix. Stir until just combined, ensuring not to overmix. The batter should have some lumps - this will help achieve fluffy pancakes.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake. Allow it to cook until bubbles form on the surface, which should take about 2-3 minutes.
  6. Flip the pancake using a spatula and cook for another 1-2 minutes, or until golden brown.
  7. Repeat with the remaining batter. Remember to regrease the skillet as needed.
  8. Serve the matcha pancakes warm, drizzled with generous amounts of maple syrup. Enjoy the earthy sweetness of matcha balanced with the sugary notes of the syrup.

Tips

  • 💡 For vegan option, replace the egg with a flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water), and use almond milk instead of regular milk.
  • 💡 To enhance the matcha flavor, you can whisk in a little extra matcha powder. Start with 1/2 teaspoon and adjust according to your taste.
  • 💡 For a beautiful finish, sprinkle some powdered sugar on top of the pancakes before serving.
