- All-purpose flour
- 1 cup
- Matcha powder
- 2 tablespoons
- Baking powder
- 2 teaspoons
- Salt

- Sugar
- 2 tablespoons
- Milk
- 1 cup
- Egg
- 1, large
- Vanilla extract
- 1 teaspoon
- Unsalted butter
- 2 tablespoons, melted (plus extra for greasing)
- Maple syrup

Instructions
- In a large bowl, whisk together the all-purpose flour, matcha powder, baking powder, salt, and sugar. This is your dry mix.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. This is your wet mix.
- Pour the wet mix into the dry mix. Stir until just combined, ensuring not to overmix. The batter should have some lumps - this will help achieve fluffy pancakes.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Allow it to cook until bubbles form on the surface, which should take about 2-3 minutes.
- Flip the pancake using a spatula and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter. Remember to regrease the skillet as needed.
