All-purpose flour
1 cup
Matcha powder
2 tablespoons
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Sugar

Milk
1 cup
Egg

Vanilla extract

Unsalted butter
2 tablespoons, melted (plus extra for greasing)
Maple syrup

Instructions

  1. In a large bowl, whisk together the all-purpose flour, matcha powder, baking powder, salt, and sugar. This is your dry mix.
  2. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. This is your wet mix.
  3. Pour the wet mix into the dry mix. Stir until just combined, ensuring not to overmix. The batter should have some lumps - this will help achieve fluffy pancakes.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake. Allow it to cook until bubbles form on the surface, which should take about 2-3 minutes.
