Instructions
- In a large bowl, whisk together the all-purpose flour, matcha powder, baking powder, salt, and sugar. This is your dry mix.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. This is your wet mix.
- Pour the wet mix into the dry mix. Stir until just combined, ensuring not to overmix. The batter should have some lumps - this will help achieve fluffy pancakes.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Allow it to cook until bubbles form on the surface, which should take about 2-3 minutes.
- Flip the pancake using a spatula and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter. Remember to regrease the skillet as needed.
- Serve the matcha pancakes warm, drizzled with generous amounts of maple syrup. Enjoy the earthy sweetness of matcha balanced with the sugary notes of the syrup.
Tips
- For vegan option, replace the egg with a flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water), and use almond milk instead of regular milk.
- To enhance the matcha flavor, you can whisk in a little extra matcha powder. Start with 1/2 teaspoon and adjust according to your taste.
- For a beautiful finish, sprinkle some powdered sugar on top of the pancakes before serving.
