Authentic Caribbean Mauby

- 1 cup Mauby bark
- 8 cups Water
- 1 tablespoon, roughly chopped Lime or lemon rind
- 1 Cinnamon stick
- 1/4 teaspoon, grated Nutmeg
- 1 to 2 cups (adjust to your taste) Sugar
- 1/2 teaspoon Angostura bitters

Instructions
- Bring the water to a rapid boil in a large pot.
- Add the Mauby bark, along with the cinnamon stick, grated nutmeg, and chopped lime or lemon rind.
- Reduce the heat to low and let the mixture simmer for approximately 20 minutes, allowing all the flavors to meld together.
- After 20 minutes, remove the pot from the heat.
- Strain the liquid through a fine-mesh strainer into a large jug or pitcher, ensuring to capture all the essence of the Mauby bark and spices.
- Stir in the sugar, starting with 1 cup. Mix until it is fully dissolved. Taste and add more sugar if desired.
- Finally, add the Angostura bitters and stir well to combine.
- Allow the Mauby to cool at room temperature. Once cool, refrigerate until chilled.
- Serve your Mauby over ice for a refreshing, authentic Caribbean experience.
