Experience a taste of the Caribbean with this Mauby recipe! Mauby, pronounced 'Maa-bee', is an iconic drink of the Caribbean islands, brewed from the bark of the Mauby tree. This drink is a wonderful paradox, being both refreshing and slightly bitter, with a unique flavor that is enhanced by the tang of lime, the warmth of cinnamon and nutmeg, and the slight hint of Angostura bitters. Sweetened to taste, it is a drink that invites you to adjust to your liking each time you brew it. It's the perfect thirst-quencher on a hot summer day, served over ice.

Ingredients

Mauby bark
1 cup
Water
8 cups
Lime or lemon rind
1 tablespoon, roughly chopped
Cinnamon stick

Nutmeg
1/4 teaspoon, grated
Sugar
1 to 2 cups (adjust to your taste)
Angostura bitters
1/2 teaspoon

Instructions

  1. Bring the water to a rapid boil in a large pot.
  2. Add the Mauby bark, along with the cinnamon stick, grated nutmeg, and chopped lime or lemon rind.
  3. Reduce the heat to low and let the mixture simmer for approximately 20 minutes, allowing all the flavors to meld together.
  4. After 20 minutes, remove the pot from the heat.
  5. Strain the liquid through a fine-mesh strainer into a large jug or pitcher, ensuring to capture all the essence of the Mauby bark and spices.
  6. Stir in the sugar, starting with 1 cup. Mix until it is fully dissolved. Taste and add more sugar if desired.
  7. Finally, add the Angostura bitters and stir well to combine.
  8. Allow the Mauby to cool at room temperature. Once cool, refrigerate until chilled.
  9. Serve your Mauby over ice for a refreshing, authentic Caribbean experience.
