Mauritian Delight Curry

Ingredients
- 1 cup Water
- To taste Salt
- A handful, chopped Fresh cilantro
- 2, diced Tomatoes
- 1 can (400 ml) Coconut milk
- 500 grams, cubed Protein of your choice (chicken, beef, tofu, etc.)
- 2, diced Bell peppers
- 2, sliced Carrots
- 2, diced Potatoes
- 1 teaspoon Cayenne pepper
- 1 tablespoon Coriander powder
- 1 tablespoon Cumin powder
- 1 teaspoon Turmeric powder
- 2 tablespoons Curry powder
- 1 tablespoon, freshly grated Ginger
- 3 cloves, minced Garlic
- 1 large, chopped Onion
- 2 tablespoons Vegetable oil

Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté for about 5 minutes until the onion becomes translucent and the mixture is fragrant.
- Stir in the curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper. Make sure the onions and spices are well combined.
- Add the diced potatoes, sliced carrots, and diced bell peppers. Cook for around 10 minutes, stirring occasionally until the vegetables start to soften.
- Next, stir in your choice of protein and cook until browned on all sides.
- Pour in the coconut milk and the diced tomatoes, stirring well to combine all ingredients.
- Season with salt, add water, and bring the curry to a boil. Once boiling, reduce the heat and let it simmer for about 30 minutes. This allows the vegetables to become tender and the flavors to meld together.
- Finish the dish by garnishing with freshly chopped cilantro.
- Serve your Mauritian curry hot, ideally complemented with steamed rice or warm naan bread.
