Mbeju - Paraguayan Cheese and Starch Pancakes

- 1/2 cup Milk

- 2 tablespoons, for cooking Butter

Instructions
- In a large mixing bowl, combine the starch, grated cheese, eggs, milk, and salt. Stir until a sticky dough forms. The mixture should be thick but malleable.
- Heat the butter in a large skillet over medium heat until melted and bubbly.
- Take a portion of the dough (about 1/4 cup) and flatten it into a pancake shape, approximately 1/2 inch thick.
- Place the flattened dough in the skillet and cook for about 5 minutes, or until the bottom is golden brown. Flip and cook the other side until golden and cooked through, about another 5 minutes.
- Remove from the skillet and repeat the process with the remaining dough, adding more butter as needed.
- Serve the Mbeju warm, perhaps with a side of salsa or your favorite dipping sauce.
