Ingredients

Water
1/2 cup
Vegetable oil
2 tablespoons
Salt
to taste
Cumin
1 teaspoon
Turmeric
1 teaspoon
Fresh ginger
1 inch piece, grated
Garlic
2 cloves, minced
Tomatoes
2, diced
Onion
1, chopped
Mixed vegetables
4 cups (such as: bell peppers, zucchini, carrots, and peas)

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion to the pan and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic, freshly grated ginger, turmeric, and cumin. Allow these ingredients to cook for another 2 minutes, stirring constantly to prevent burning.
  4. Add the diced tomatoes to the pan. Cook until the tomatoes start to break down and soften, which should take about 3 minutes.
  5. Next, add your selection of mixed vegetables to the pan and stir well to combine them with the aromatic spices.
  6. Pour in the water, cover the pan, and simmer the vegetable mixture for about 10 minutes, or until the vegetables are tender to your liking.
  7. Season the Mboga with salt to taste.
  8. Serve your Mboga hot, as a side dish with your favorite main course. It pairs beautifully with grilled meat or fish, or with a Kenyan staple like Ugali (a type of cornmeal porridge).
