Medisterpolse - Traditional Danish Sausage

Medisterpolse is a beloved traditional Danish sausage that embodies the heart of Danish culinary heritage. Made from a blend of succulent ground pork and aromatic spices, these flavorful sausages are often enjoyed during festive gatherings and cozy family dinners. With a crispy exterior and juicy interior, Medisterpolse pairs beautifully with hearty sides like creamy mashed potatoes and tangy sauerkraut, making it a true comfort food experience.

Ingredients

Ground pork
2 pounds
Breadcrumbs
1 cup
Onion
1, finely chopped
Garlic
3 cloves, minced
Nutmeg
1/2 teaspoon
Allspice
1/2 teaspoon
Black pepper
1 teaspoon
Salt
1 teaspoon
Vegetable oil
2 tablespoons
Butter
2 tablespoons

Instructions

  1. In a large mixing bowl, combine the ground pork, breadcrumbs, finely chopped onion, minced garlic, salt, black pepper, allspice, and nutmeg. Use your hands to mix thoroughly until all ingredients are evenly incorporated.
  2. Shape the mixture into sausage-shaped patties, each approximately 3 inches long and 1 inch thick. Ensure they are well-formed to hold together while cooking.
  3. In a large skillet, heat the vegetable oil and butter over medium heat until shimmering.
  4. Carefully add the medisterpolse patties to the skillet, making sure not to overcrowd the pan. Cook for about 5 minutes on each side, or until the sausages are golden brown and cooked through to an internal temperature of 160°F (70°C).
  5. Once cooked, remove the sausages from the skillet and let them rest for a couple of minutes before serving.

Tips

  • 💡 For added flavor, consider mixing in finely chopped fresh herbs like parsley or thyme.
  • 💡 If you prefer a spicier sausage, add a pinch of cayenne pepper or crushed red pepper flakes to the meat mixture.
  • 💡 Serve with a side of homemade mustard or a creamy dill sauce for an extra burst of flavor.
