Mediterranean Breakfast Burrito

Bursting with the vibrant flavors of feta cheese, ripe tomatoes, fresh spinach, and tangy kalamata olives, it's a perfect fusion of nutritious ingredients and satisfying taste. Inspired by the traditional breakfasts of Greece, this twist on a classic burrito offers a tantalizing start to your day.

Ingredients

Olive oil
2 tablespoons
Tortillas
4 large
Salt and pepper
to taste
Fresh parsley
1/4 cup, chopped
Red onion
1 medium, finely chopped
Kalamata olives
1/2 cup, pitted and halved
Feta cheese
1 cup, crumbled
Tomatoes
2 medium, diced
Spinach
2 cups, fresh
Eggs
6 large

Instructions

  1. In a large bowl, whisk the eggs with salt and pepper until well incorporated.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the finely chopped red onion to the skillet and sauté until softened, approximately 2 minutes.
  4. Add the fresh spinach to the skillet and stir until wilted, another 2 minutes.
  5. Pour the whisked eggs into the skillet, continuously stirring to scramble them until they're fully cooked.
  6. Warm the tortillas individually in a separate dry skillet over medium heat or in the microwave for 15-20 seconds.
  7. Divide the scrambled eggs, diced tomatoes, crumbled feta cheese, halved olives, and chopped parsley evenly among the warmed tortillas.
  8. Fold the sides of the tortillas over the filling and roll them up tightly to form the burritos.
  9. Serve your Mediterranean breakfast burritos warm, perhaps with a drizzle of tzatziki sauce or a sprinkle of extra feta cheese on top. Enjoy!
