Mediterranean Breakfast Burrito

Ingredients
- 2 tablespoons Olive oil
- 4 large Tortillas
- to taste Salt and pepper
- 1/4 cup, chopped Fresh parsley
- 1 medium, finely chopped Red onion
- 1/2 cup, pitted and halved Kalamata olives
- 1 cup, crumbled Feta cheese
- 2 medium, diced Tomatoes
- 2 cups, fresh Spinach
- 6 large Eggs

Instructions
- In a large bowl, whisk the eggs with salt and pepper until well incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped red onion to the skillet and sauté until softened, approximately 2 minutes.
- Add the fresh spinach to the skillet and stir until wilted, another 2 minutes.
- Pour the whisked eggs into the skillet, continuously stirring to scramble them until they're fully cooked.
- Warm the tortillas individually in a separate dry skillet over medium heat or in the microwave for 15-20 seconds.
- Divide the scrambled eggs, diced tomatoes, crumbled feta cheese, halved olives, and chopped parsley evenly among the warmed tortillas.
- Fold the sides of the tortillas over the filling and roll them up tightly to form the burritos.
