
Mediterranean Chicken Gyro Salad
This Mediterranean-inspired salad features grilled chicken, fresh vegetables, and a tangy tzatziki dressing.
Ingredients
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Fresh parsley (2 tablespoons, chopped)
- Feta cheese (1/4 cup, crumbled)
- Kalamata olives (1/4 cup, pitted and halved)
- Red onion (1/4 cup, thinly sliced)
- Tomato (1, diced)
- Cucumber (1, diced)
- Greek yogurt (1/2 cup)
- Garlic (2 cloves, minced)
- Lemon juice (2 tablespoons)
- Olive oil (2 tablespoons)
- Chicken breast (2, boneless and skinless)
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well.
- Add the chicken breasts to the marinade and let them marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6-8 minutes per side, or until cooked through.
- Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
- In a separate bowl, combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, Kalamata olives, crumbled feta cheese, and chopped fresh parsley. Mix well to make the tzatziki dressing.
- Arrange the sliced chicken on a bed of mixed greens or lettuce.
- Drizzle the tzatziki dressing over the chicken and salad.
