Ingredients

Fresh parsley
1/4 cup, chopped
Red onion
1/4 cup, thinly sliced
Tomato
1 medium, sliced
Cucumber
1 medium, sliced
Kalamata olives
1/3 cup, pitted and sliced
Feta cheese
1/2 cup, crumbled
Tzatziki sauce
1/2 cup
Whole wheat tortillas
4 (10-inch)
Salt
to taste
Pepper
to taste
Garlic
2 cloves, minced
Lemon juice
2 tablespoons
Olive oil
2 tablespoons
Chicken breast
2 (6 oz each)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let them marinate for at least 15 minutes to absorb the flavors.
  2. Preheat a grill or grill pan over medium-high heat. Once hot, grill the marinated chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from heat and let it rest for a few minutes before slicing into strips.
  3. While the chicken is resting, warm the whole wheat tortillas in a dry skillet over low heat or in the microwave for a few seconds until pliable.
  4. Spread a tablespoon of tzatziki sauce onto the center of each tortilla, creating a base of creamy goodness.
  5. Evenly distribute the sliced chicken, crumbled feta cheese, Kalamata olives, cucumber slices, tomato slices, red onion slices, and chopped parsley on top of the tzatziki sauce.
  6. Carefully fold the sides of the tortillas over the filling, then roll them up tightly from the bottom to form a wrap sandwich.
  7. Slice the wraps in half diagonally and serve immediately, perhaps with a side of extra tzatziki or a fresh side salad.
