Ingredients

Eggplant
1 large, sliced into 1/2-inch rounds
Tomatoes
2 large, diced
Cucumbers
1 large, diced
Red onion
1/2, thinly sliced
Feta cheese
1 cup, crumbled
Fresh parsley
1/4 cup, chopped
Garlic
2 cloves, minced
Olive oil
1/4 cup, plus more for grilling
Lemon juice
2 tablespoons, freshly squeezed
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush both sides of the eggplant slices generously with olive oil and season with salt and pepper.
