- Canned tomatoes
- 1 can (14 oz), diced
- Vegetable broth
- 4 cups
- Dried basil
- 1 teaspoon
- Dried oregano
- 1 teaspoon

- 1/4 cup, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
- Stir in the diced eggplant, zucchini, and red bell pepper. Cook for an additional 10 minutes, stirring occasionally to prevent sticking.
