Mee Rebus
Mee Rebus is a beloved Malay noodle dish that captivates with its rich, savory gravy derived from the warmth of spices and the sweetness of potatoes. Ingredients
- 2 tablespoons Cooking oil
- 1 cup, cooked Mashed potatoes
- 200g, peeled and deveined Shrimp
- 1 liter Water
- 200g (available in stores) Mee rebus paste
- 400g Yellow noodles
- 1 cup, rinsed Bean sprouts
- 200g, cubed Fried tofu
- 2, halved Hard-boiled eggs
- 2, chopped Spring onions
- 1/2 cup Fried shallots
- 1, cut into wedges Lime

Instructions
- In a large pot, heat the cooking oil over medium heat.
- Add the mashed potatoes to the pot and stir-fry for 2 minutes until fragrant.
- Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
- Pour in 1 liter of water and bring it to a boil.
- Stir in the mee rebus paste, mixing well to combine. Allow the mixture to simmer for 20 minutes, letting the flavors meld together.
- While the gravy simmers, bring a separate pot of water to a boil. Blanch the yellow noodles and bean sprouts in the boiling water for 1-2 minutes until just tender. Drain and set aside.
- To serve, place a portion of yellow noodles in a bowl.
- Ladle the rich mee rebus gravy over the noodles.
- Top with fried tofu, blanched bean sprouts, shrimp, and halved hard-boiled eggs.
- Garnish with chopped spring onions and a generous sprinkle of fried shallots.
- Serve hot with lime wedges on the side for an extra burst of freshness.
