Mee Rebus

Mee Rebus is a beloved Malay noodle dish that captivates with its rich, savory gravy derived from the warmth of spices and the sweetness of potatoes. This dish is not only a staple in Southeast Asia but also a symbol of the region's vibrant food culture, often enjoyed as a comfort food. Each bowl is a symphony of textures and flavors, featuring tender yellow noodles, succulent shrimp, crispy fried tofu, and a refreshing squeeze of lime to elevate the dish.

Ingredients

Cooking oil
2 tablespoons
Mashed potatoes
1 cup, cooked
Shrimp
200g, peeled and deveined
Water
1 liter
Mee rebus paste
200g (available in stores)
Yellow noodles
400g
Bean sprouts
1 cup, rinsed
Fried tofu
200g, cubed
Hard-boiled eggs
2, halved
Spring onions
2, chopped
Fried shallots
1/2 cup
Lime
1, cut into wedges

Instructions

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the mashed potatoes to the pot and stir-fry for 2 minutes until fragrant.
  3. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  4. Pour in 1 liter of water and bring it to a boil.
  5. Stir in the mee rebus paste, mixing well to combine. Allow the mixture to simmer for 20 minutes, letting the flavors meld together.
  6. While the gravy simmers, bring a separate pot of water to a boil. Blanch the yellow noodles and bean sprouts in the boiling water for 1-2 minutes until just tender. Drain and set aside.
  7. To serve, place a portion of yellow noodles in a bowl.
  8. Ladle the rich mee rebus gravy over the noodles.
  9. Top with fried tofu, blanched bean sprouts, shrimp, and halved hard-boiled eggs.
  10. Garnish with chopped spring onions and a generous sprinkle of fried shallots.
  11. Serve hot with lime wedges on the side for an extra burst of freshness.

Tips

  • 💡 For an extra depth of flavor, consider adding a splash of soy sauce or a dash of chili sauce for heat.
  • 💡 Feel free to customize your toppings by adding boiled vegetables or a sprinkle of crushed peanuts for added crunch.
