
Melanzane Alla Parmigiana
Melanzane alla Parmigiana is a classic Italian dish made with layers of fried eggplant, tomato sauce, and cheese.
Ingredients
- Salt and pepper (to taste)
- Basil leaves (1/4 cup, chopped)
- Parmesan cheese (1/2 cup, grated)
- Mozzarella cheese (1 cup, grated)
- Tomato sauce (2 cups)
- Olive oil (1/4 cup)
- Eggplant (2 large, sliced)
Instructions
- Preheat the oven to 375°F.
- Sprinkle salt on the eggplant slices and let them sit for 15 minutes to remove excess moisture. Rinse and pat dry.
- Heat olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown on both sides. Remove from the skillet and drain on paper towels.
- In a baking dish, spread a thin layer of tomato sauce on the bottom.
- Place a layer of fried eggplant slices on top of the sauce.
- Sprinkle with grated mozzarella and Parmesan cheese, and chopped basil leaves. Season with salt and pepper.
- Repeat the layers until all the ingredients are used, ending with a layer of cheese and basil on top.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving. Enjoy!
