Melanzane Alla Parmigiana

Melanzane alla Parmigiana is a classic Italian dish made with layers of fried eggplant, tomato sauce, and cheese.

Ingredients

  • Salt and pepper (to taste)
  • Basil leaves (1/4 cup, chopped)
  • Parmesan cheese (1/2 cup, grated)
  • Mozzarella cheese (1 cup, grated)
  • Tomato sauce (2 cups)
  • Olive oil (1/4 cup)
  • Eggplant (2 large, sliced)

Instructions

  1. Preheat the oven to 375°F.
  2. Sprinkle salt on the eggplant slices and let them sit for 15 minutes to remove excess moisture. Rinse and pat dry.
  3. Heat olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown on both sides. Remove from the skillet and drain on paper towels.
  4. In a baking dish, spread a thin layer of tomato sauce on the bottom.
  5. Place a layer of fried eggplant slices on top of the sauce.
  6. Sprinkle with grated mozzarella and Parmesan cheese, and chopped basil leaves. Season with salt and pepper.
  7. Repeat the layers until all the ingredients are used, ending with a layer of cheese and basil on top.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  10. Let it cool for a few minutes before serving. Enjoy!
