Ingredients
- Masa harina
- 2 cups
- Water
- 1 to 1 1/4 cups, adjust as necessary
- Salt
- 1/2 teaspoon
- Refried black beans
- 1 cup, warmed
- Red salsa
- 1/2 cup, store-bought or homemade
- Shredded cabbage
- 1 cup
- Sliced avocado
- 1 large
- Queso fresco
- 1/2 cup, crumbled
Instructions
- In a large bowl, combine the masa harina, water, and a pinch of salt. Mix until a soft, pliable dough forms. Adjust the water as needed to achieve the right consistency.
- Divide the dough into 8 equal portions and roll each portion into a ball. Flatten each ball slightly to shape them into small ovals, about 1/4 inch thick.
- Preheat a griddle or skillet over medium heat. Cook the memelas for about 2 minutes on each side, or until they are golden brown and slightly crispy.
- Spread a generous layer of warmed refried black beans on each memela, then top with a spoonful of red salsa, shredded cabbage, avocado slices, and crumbled queso fresco.
- Serve the memelas warm, with extra salsa on the side for dipping.
