Instructions
- In a large pot, bring enough water to a boil to cover the beef tripe. Add the tripe and cook for 10 minutes. Drain and rinse thoroughly under cold water to remove any impurities.
- Return the cleaned tripe to the pot and add the chopped onion, minced garlic, dried red chili peppers, ground cumin, dried oregano, salt, and black pepper. Cover the ingredients with fresh water and bring to a boil.
- Once boiling, reduce the heat to low and cover the pot. Allow the mixture to simmer for 2 to 3 hours, or until the tripe is tender and fully cooked.
- After the tripe is tender, add the drained and rinsed hominy to the pot. Simmer for an additional 30 minutes to allow the flavors to meld.
- When ready to serve, ladle the menudo into bowls and garnish with freshly chopped cilantro and lime wedges for an extra zing.
- Enjoy your delicious Menudo hot, paired with warm tortillas or crusty bread for a complete meal!
Tips
- For an extra depth of flavor, consider adding a splash of apple cider vinegar or a few bay leaves while simmering.
- If you prefer a thicker broth, blend a portion of the hominy and add it back into the soup.
- Menudo is often served with sides such as chopped onions, diced radishes, or crushed red pepper flakes for those who like an extra kick!
