Authentic Mexican Menudo
Menudo is a beloved traditional Mexican soup that warms the soul with its robust flavors. This hearty dish features tender beef tripe simmered in a rich, spicy chili broth, combined with hominy for a satisfying texture. Ingredients
- 2 pounds, cleaned and cut into strips Beef tripe
- 2 cans (15 oz each), drained and rinsed Hominy
- 1 medium, chopped Onion
- 4 cloves, minced Garlic
- 4 to 6, depending on spice preference Dried red chili peppers
- 1 teaspoon Ground cumin
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
- for garnish Fresh cilantro
- 1, cut into wedges Lime
- enough to cover ingredients Water

Instructions
- In a large pot, bring enough water to a boil to cover the beef tripe. Add the tripe and cook for 10 minutes. Drain and rinse thoroughly under cold water to remove any impurities.
- Return the cleaned tripe to the pot and add the chopped onion, minced garlic, dried red chili peppers, ground cumin, dried oregano, salt, and black pepper. Cover the ingredients with fresh water and bring to a boil.
- Once boiling, reduce the heat to low and cover the pot. Allow the mixture to simmer for 2 to 3 hours, or until the tripe is tender and fully cooked.
- After the tripe is tender, add the drained and rinsed hominy to the pot. Simmer for an additional 30 minutes to allow the flavors to meld.
- When ready to serve, ladle the menudo into bowls and garnish with freshly chopped cilantro and lime wedges for an extra zing.
