Instructions
- In a large mixing bowl, combine the ground pork with the minced garlic, smoked paprika, ground cumin, dried oregano, ground coriander, cayenne pepper, salt, black pepper, vinegar, and vegetable oil.
- Using your hands or a spoon, mix the ingredients thoroughly until well combined and the spices are evenly distributed throughout the pork.
- Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour, or overnight if you have time, to let the flavors meld and develop.
- When ready to cook, heat a skillet over medium heat. Add the chorizo mixture to the skillet.
- Cook the chorizo, breaking it up with a wooden spoon, until it is browned and cooked through, about 10-12 minutes.
- Once cooked, remove from heat and let it cool slightly before serving.
- Serve the Mexican chorizo in tacos, burritos, or as a delicious topping for nachos. You can also pair it with fresh cilantro, diced onions, or your favorite salsa.
Tips
- For a milder version, reduce the cayenne pepper or omit it entirely.
- You can substitute ground turkey or chicken for a leaner option.
- This chorizo can be made ahead of time and frozen for later use—just thaw it in the refrigerator before cooking.
