4 cloves, minced
Smoked paprika
2 tablespoons
Ground cumin
1 tablespoon
Dried oregano
1 tablespoon
Ground coriander
1 teaspoon
Cayenne pepper
1 teaspoon (adjust for heat preference)
Black pepper
1/2 teaspoon
Salt
1 teaspoon
Vinegar
2 tablespoons (white or apple cider)
Vegetable oil

Instructions

  1. In a large mixing bowl, combine the ground pork with the minced garlic, smoked paprika, ground cumin, dried oregano, ground coriander, cayenne pepper, salt, black pepper, vinegar, and vegetable oil.
  2. Using your hands or a spoon, mix the ingredients thoroughly until well combined and the spices are evenly distributed throughout the pork.
  3. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour, or overnight if you have time, to let the flavors meld and develop.
  4. When ready to cook, heat a skillet over medium heat. Add the chorizo mixture to the skillet.
  5. Cook the chorizo, breaking it up with a wooden spoon, until it is browned and cooked through, about 10-12 minutes.
  6. Once cooked, remove from heat and let it cool slightly before serving.
