Ingredients

Original recipe serves 4

Vegetable oil
2 tablespoons
Salt
to taste
Lime
1, cut into wedges
Fresh cilantro
1/4 cup, chopped
Queso fresco
1 cup, crumbled
Corn tortillas

2 cups, fresh or canned

Instructions

  1. In a skillet, heat the vegetable oil over medium heat.
  2. Add the huitlacoche to the skillet and cook for about 5 minutes, stirring occasionally, until heated through and slightly softened.
  3. Season the huitlacoche mixture with salt to taste.
  4. In a separate skillet or on a griddle, warm the corn tortillas until pliable.
  5. Take 4 tortillas and divide the huitlacoche mixture evenly among them.
  6. Sprinkle each filled tortilla with crumbled queso fresco and chopped cilantro.
  7. Top each with another tortilla to form a quesadilla.
  8. In the skillet or on the griddle, cook the quesadillas for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden and crispy.
  9. Remove from heat and serve the quesadillas hot with lime wedges on the side for squeezing over.
