Mexican Huitlacoche Quesadillas

Ingredients
- Vegetable oil
- 2 tablespoons
- Salt

- Lime
- 1, cut into wedges
- Fresh cilantro
- 1/4 cup, chopped
- Queso fresco
- 1 cup, crumbled
- Corn tortillas
- 8
- Huitlacoche
- 2 cups, fresh or canned
Instructions
- In a skillet, heat the vegetable oil over medium heat.
- Add the huitlacoche to the skillet and cook for about 5 minutes, stirring occasionally, until heated through and slightly softened.
- Season the huitlacoche mixture with salt to taste.
- In a separate skillet or on a griddle, warm the corn tortillas until pliable.
- Take 4 tortillas and divide the huitlacoche mixture evenly among them.
- Sprinkle each filled tortilla with crumbled queso fresco and chopped cilantro.
- Top each with another tortilla to form a quesadilla.
- In the skillet or on the griddle, cook the quesadillas for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden and crispy.
- Remove from heat and serve the quesadillas hot with lime wedges on the side for squeezing over.
