Ingredients

Chorizo sausage
8 ounces, casings removed
Potatoes
4 medium, peeled and diced
Onion
1 medium, diced
Garlic
2 cloves, minced
Tomato
1 medium, diced
Jalapeno

1/4 cup, chopped
Salt
to taste
Pepper
to taste
Avocado
1, sliced
Lime wedges

Instructions

  1. In a large skillet, cook the chorizo over medium heat, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Remove the chorizo from the skillet and set aside, leaving the drippings in the pan.
  2. In the same skillet, add the diced potatoes. Cook, stirring occasionally, until they are golden brown and crispy, about 10-12 minutes.
  3. Add the diced onion, minced garlic, diced tomato, and diced jalapeno to the skillet. Cook until the vegetables are softened and fragrant, about 5 minutes.
  4. Return the cooked chorizo to the skillet and mix well with the potatoes and vegetables. Season with salt and pepper to taste, and cook for an additional 2-3 minutes to heat through.
