Pinto beans
2 cups, cooked and drained
Onion
1 medium, diced
Garlic
3 cloves, minced
Vegetable oil
2 tablespoons
Cumin
1 teaspoon
Chili powder
1 tablespoon
Salt
1/2 teaspoon, or to taste
Water
1/2 cup (or as needed)
Cilantro
1/4 cup, chopped (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the diced onion and minced garlic to the skillet. Sauté for about 5 minutes, or until the onion becomes translucent and aromatic.
  3. Add the cooked pinto beans to the skillet. Using a potato masher or fork, mash the beans to your desired consistency—smooth or chunky.
  4. Stir in the cumin, chili powder, and salt. Cook for an additional 2 minutes to allow the spices to meld with the beans.
  5. Pour in the water and mix well. Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally. If the mixture becomes too thick, add a little more water to reach your preferred consistency.
  6. Remove from heat and garnish with the chopped cilantro before serving.
