Ingredients

Corn tortillas
8, warmed
Chicken breast
2 cups, cooked and shredded
Onion
1, diced
Bell pepper
1, diced (any color)
Jalapeno
1, diced (seeds removed for less heat)
Tomato
1, diced
Salt
to taste
Sour cream
1/2 cup, for serving
Avocado
1, sliced
Cilantro
1/4 cup, chopped
Lime
1, juiced
Olive oil
2 tablespoons, for cooking

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion, bell pepper, and jalapeno. Sauté until softened, about 5 minutes.
  3. Stir in the shredded chicken, diced tomato, and salt. Cook for another 5 minutes until heated through.
  4. In a separate skillet, warm the corn tortillas until they are pliable, about 30 seconds on each side.
  5. To assemble, place a generous spoonful of the chicken mixture onto each tortilla and fold in half.
  6. Serve the tortillas alongside sliced avocado, chopped cilantro, sour cream, and a squeeze of lime juice to enhance the flavors.
