- Corn tortillas
- 8, warmed
- Chicken breast
- 2 cups, cooked and shredded
- Onion
- 1, diced
- Bell pepper
- 1, diced (any color)
- Jalapeno
- 1, diced (seeds removed for less heat)
- Tomato
- 1, diced
- Salt
- to taste
- Sour cream
- 1/2 cup, for serving
- Avocado
- 1, sliced
- Cilantro
- 1/4 cup, chopped
- Lime
- 1, juiced
- Olive oil
- 2 tablespoons, for cooking
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion, bell pepper, and jalapeno. Sauté until softened, about 5 minutes.
- Stir in the shredded chicken, diced tomato, and salt. Cook for another 5 minutes until heated through.
- In a separate skillet, warm the corn tortillas until they are pliable, about 30 seconds on each side.
- To assemble, place a generous spoonful of the chicken mixture onto each tortilla and fold in half.
- Serve the tortillas alongside sliced avocado, chopped cilantro, sour cream, and a squeeze of lime juice to enhance the flavors.
