4 pieces, cut into wedges
Red bell pepper

Feta cheese
1 cup, crumbled
Olives
1 cup, mixed varieties
Baba ganoush
1 cup
Tzatziki
1 cup
Hummus

Instructions

  1. Start by preparing the dips: For hummus, blend 1 can of drained chickpeas, 1/4 cup tahini, 2 tablespoons lemon juice, 1 garlic clove, and salt to taste until smooth. For tzatziki, mix 1 cup Greek yogurt with 1/2 cucumber (grated and drained), 1 clove minced garlic, 1 tablespoon lemon juice, and salt to taste. For baba ganoush, roast 1 large eggplant until soft, then blend with 2 tablespoons tahini, 2 tablespoons lemon juice, 1 garlic clove, and salt until smooth.
  2. On a large serving platter, artistically arrange the prepared dips: place the hummus, tzatziki, and baba ganoush in small bowls or dollops.
  3. Surround the dips with a colorful assortment of olives, crumbled feta cheese, sliced cherry tomatoes, cucumber, and red bell pepper.
