Microwave Mug Cheesecake

This quick and easy Microwave Mug Cheesecake is a delightful single-serving dessert that can be whipped up in just a few minutes. It's perfect for satisfying your cheesecake cravings without the need for an oven. The combination of a buttery graham cracker crust and a creamy cheesecake filling makes it a popular treat. You can customize it with toppings like fruit or chocolate to elevate the flavors.

Serves 1

Ingredients

Graham cracker crumbs
3 tablespoons
Melted butter
1 tablespoon
Granulated sugar
1 teaspoon (for crust)
Cream cheese
2 oz, softened
Granulated sugar
1 tablespoon (for filling)
Egg yolk
1
Vanilla extract
a splash
Lemon juice
a squeeze (optional)
Sour cream
1 tablespoon (optional, for tanginess)
Toppings (fruit or chocolate)
as desired

Instructions

  1. In a microwave-safe mug, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture firmly into the bottom of the mug to form the crust.
  2. In a separate bowl, combine the softened cream cheese, sugar, egg yolk, vanilla extract, and lemon juice (if using). Mix until smooth and creamy.
  3. Pour the cheesecake filling over the crust in the mug.
  4. Microwave on high for 60-90 seconds, checking for doneness. The cheesecake should be set but still slightly jiggly in the center.
  5. Let the mug cheesecake cool for a few minutes before enjoying. Top with your choice of fruit or chocolate if desired.
