Water
4 cups
Salt
1 teaspoon
Maize meal (cornmeal)
2 cups
Unsalted butter
2 tablespoons
Milk
1/2 cup (optional for serving)
Sugar
to taste (optional for serving)

Instructions

  1. In a large pot, bring the water to a rolling boil over medium-high heat.
  2. Add the salt to the boiling water, stirring to dissolve.
  3. Gradually add the maize meal to the pot, whisking continuously to prevent lumps from forming.
  4. Once incorporated, reduce the heat to low and cover the pot with a lid. Let it simmer for about 30 minutes, stirring occasionally to ensure the mieliepap doesn't stick to the bottom.
  5. After 30 minutes, check the consistency; it should be thick and creamy. If it's too thick, you can add a little more water and stir.
  6. Remove the pot from heat and stir in the butter until fully melted and combined.
  7. Serve the mieliepap hot. For breakfast, drizzle with warm milk and sprinkle with sugar. As a side dish, pair it with your favorite meat and gravy.
