Experience a taste of Italy with this Minestrone Di Farro! This rustic and hearty soup is brimming with farro, an ancient grain with a delightful chewy texture, mixed with a medley of tender vegetables and creamy cannellini beans. It's simmered in a savory vegetable broth, and finished with vibrant kale for an added nutritional punch. Top it off with a sprinkle of Parmesan cheese for an extra layer of flavor. This soup is a comforting, nutritious meal that's perfect for those colder days or when you just need a bowl of comfort.
