Mint Slice

- 200g, chopped Dark chocolate
- 1/4 cup Milk
- 2 cups, sifted Icing sugar
- 1 teaspoon Peppermint extract
- 1, beaten Egg
- 1 cup All-purpose flour
- 1/4 cup Cocoa powder
- 1/2 cup Granulated sugar
- 100g, melted Unsalted butter

Instructions
- Preheat the oven to 180°C (350°F) and line a square 8-inch baking tin with baking paper, leaving some overhang for easy removal.
- In a mixing bowl, combine the melted unsalted butter, granulated sugar, cocoa powder, all-purpose flour, and the beaten egg. Mix until smooth and well-combined.
- Press the mixture firmly into the base of the prepared baking tin to form an even layer.
- Bake in the preheated oven for 10 minutes, then remove and allow to cool completely in the tin.
- To prepare the mint filling, in a separate bowl, whisk together the peppermint extract, icing sugar, and milk until smooth and creamy.
- Spread the mint filling evenly over the cooled biscuit base, smoothing the top with a spatula.
- Melt the chopped dark chocolate in a microwave or over a double boiler, stirring until smooth. Pour the melted chocolate over the mint filling and spread it evenly with a spatula.
- Refrigerate the slice for at least 2 hours, or until the chocolate has set completely.
- Once set, lift the slice out of the tin using the overhanging baking paper and cut into squares. Serve chilled and enjoy!
Tips
- For a more intense mint flavor, increase the peppermint extract to 1.5 teaspoons.
- If you prefer a crunchier base, add 1/2 cup of crushed digestive biscuits to the base mixture.
