AMERICAN · MAIN COURSE · SERVES 4

Craving a steak dinner but short on time? This succulent minute steak recipe will transport you to a chic steakhouse in no time. The minute steak, named for its speedy cooking time, is seared to perfection and bathed in a rich, buttery sauce. The light seasoning enhances the natural flavor of the beef, creating a dish that's both simple and elegant. Historically, minute steak was a way for butcher shops to sell less tender cuts of beef, but with this recipe, it becomes a star on its own right.

Ingredients

Original recipe serves 4

Unsalted butter
2 tablespoons
Olive oil
2 tablespoons
Paprika
1/2 teaspoon
Garlic powder
1/2 teaspoon
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Minute steaks
4 (about 5 ounces each)

Instructions

  1. In a small bowl, combine the salt, freshly ground black pepper, garlic powder, and paprika.
  2. Season both sides of the minute steaks evenly with the spice mix.
  3. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  4. Add the minute steaks and sear for 2-3 minutes per side for medium-rare. Adjust the cooking time according to your preferred doneness.
  5. Remove the steaks from the skillet and let them rest on a plate for a few minutes to allow the juices to redistribute.
  6. Reduce heat to medium, add the butter to the same skillet and allow it to melt, swirling to cover the bottom of the skillet.
  7. Pour the melted butter over the resting steaks, ensuring each steak is well coated.
  8. Serve immediately with your favorite sides like mashed potatoes or steamed vegetables.

Tips

  • 💡 You can add a splash of red wine or beef broth to the skillet after removing the steaks and scrape up any browned bits for extra flavor. Pour this 'deglaze' over the steaks along with the butter.
  • 💡 For a creamier sauce, add a splash of heavy cream to the melted butter.
