Servings: 4

Ingredients

Potatoes
4 medium, grated
Olive oil
2 tablespoons
White miso paste
2 tablespoons
Soy sauce
1 tablespoon
Honey
1 tablespoon
Salt
to taste
Pepper
to taste
Green onions
2, chopped (for garnish)

Instructions

  1. Rinse the grated potatoes under cold water until the water runs clear to remove excess starch, which helps achieve a crispier texture. Squeeze out any excess water and set aside.
  2. In a small bowl, combine the white miso paste, soy sauce, and honey. Whisk until smooth to create your savory glaze.
  3. Heat the olive oil in a large skillet over medium heat. Make sure the oil is hot before adding the potatoes to achieve a crispy exterior.
  4. Add the grated potatoes to the skillet, spreading them out evenly, and press them down with a spatula. Allow to cook without stirring for about 10 minutes, or until the bottom is golden brown and crispy.
  5. Carefully flip the hashbrowns using a spatula and cook the other side for another 10 minutes, or until it is golden brown and crispy.
  6. Drizzle the prepared miso glaze over the hashbrowns and gently toss to coat them evenly.
  7. Season with salt and pepper to taste, adjusting as necessary.
  8. Garnish with chopped green onions before serving to add a fresh crunch.
