Miso Soup

Ingredients
- Green onions
- 2, thinly sliced
- Dried seaweed (wakame)
- 1/4 cup, rehydrated
- Firm tofu
- 1 cup, cubed
- Miso paste
- 3 tablespoons
- Dashi stock
- 4 cups
Instructions
- In a pot, bring the dashi stock to a gentle simmer over medium heat.
- In a small bowl, take a ladleful of hot dashi stock and dissolve the miso paste into it, stirring until smooth.
- Once the dashi is simmering, add the dissolved miso paste back into the pot and stir well to combine.
- Add the cubed tofu and rehydrated seaweed to the pot and simmer for an additional 5 minutes, or until the tofu is heated through.
- Remove from heat and garnish with the sliced green onions just before serving.
- Serve hot and enjoy the comforting flavors of this traditional Japanese soup!
