Mistela
Mistela is a delightful and traditional Spanish sweet wine, perfect for sipping after a meal or pairing with desserts. Its rich, sweet flavor derives from the natural sugars of the grape juice, which is expertly preserved by the addition of brandy, stopping the fermentation process. Infused with aromatic notes of cinnamon and a zesty hint from lemon peel, Mistela is not only a drink but also a celebration of Spain's winemaking heritage. Serve it chilled for an enchanting experience that transports you to the sun-soaked vineyards of Spain.

Instructions
- In a large pot, combine the grape juice, brandy, sugar, cinnamon stick, and lemon peel.
- Stir the mixture over medium heat until the sugar is completely dissolved. Do not let it boil, as you want to preserve the fresh flavors.
- Once the sugar is dissolved, remove the pot from the heat and let it cool to room temperature.
- After the mixture has cooled, strain it through a fine mesh sieve or cheesecloth to remove the cinnamon stick and lemon peel.
- Pour the Mistela into a clean bottle or jar and seal it tightly.
- Store the Mistela in a cool, dark place for at least two weeks to allow the flavors to meld and mature.
- Serve chilled as a dessert wine, or enjoy it on its own as a sweet treat.
Tips
- For added depth of flavor, consider infusing the Mistela with additional spices such as cloves or nutmeg.
- Experiment with different types of grape juice, such as white, red, or even blended varieties, to create your unique twist on this classic drink.
- Mistela pairs beautifully with rich desserts like chocolate cake, cheese platters, or even fruit tarts.
