Ingredients

Original recipe serves 6

Water
1/2 cup
Cornstarch
2 tablespoons
Vanilla extract
1/2 teaspoon
Lemon juice
1 tablespoon
Sugar
1/4 cup
Mixed berries
3 cups (strawberries, blueberries, raspberries)

Instructions

  1. In a medium saucepan, combine the mixed berries, sugar, lemon juice, and vanilla extract.
  2. Simmer the mixture over medium heat, stirring occasionally, until the berries release their juices and the mixture starts to simmer, about 10 minutes.
  3. In a separate small bowl, combine the cornstarch and water. Whisk until the mixture is smooth and no lumps remain.
  4. Gradually add the cornstarch mixture to the simmering berries, stirring constantly.
  5. Continue to cook the compote for an additional 2-3 minutes, or until it has thickened to your liking.
  6. Once thickened, remove the compote from the heat and let it cool slightly.
  7. Serve the mixed berry compote warm over your breakfast pancakes or waffles, or chill before serving over yogurt or ice cream. Enjoy!
