- Heavy cream

- Club soda

- In a medium saucepan, combine the mixed berries, sugar, and water. Bring this mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for about 10 minutes. The berries will soften and release their sweet, vibrant juices.
- Strain the berry mixture through a fine-mesh sieve into a bowl, pressing on the berries to extract as much juice and flavor as possible. This will be your homemade berry syrup. Discard the berry solids.
- Allow the syrup to cool down to room temperature. For quicker cooling, you can place the bowl in an ice bath.
- To assemble the Italian soda, fill a tall glass with ice. Pour in 1/4 cup of the berry syrup.
- Top off the glass with 1 cup of club soda, and then add a tablespoon of heavy cream for a touch of richness.
- Stir gently to combine, ensuring the cream beautifully swirls through the soda.
