Ingredients

Vegetable oil
2 tablespoons
Salt
to taste
Black pepper
to taste
Garlic
2 cloves, minced
Onion
1 medium, chopped
Spinach
2 cups, chopped
Corn kernels
1 cup, fresh or frozen
Potatoes
4 medium, peeled and cubed

Instructions

  1. In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, approximately 15 minutes. Drain and set aside.
  2. Meanwhile, in another pot, cook the corn kernels in boiling water for about 5 minutes. Drain and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  4. Stir in the chopped spinach, cooking until it wilts, which should take another 3-4 minutes.
  5. Incorporate the drained potatoes and corn into the skillet. Using a potato masher or fork, mash everything together until well combined but still slightly chunky for texture.
  6. Season the mixture with salt and black pepper to taste. Continue to mash and fold over low heat for an additional 5 minutes, stirring occasionally to prevent sticking.
  7. Serve hot, garnished with a sprinkle of black pepper or a drizzle of olive oil if desired.
