Ingredients
- Vegetable oil
- 2 tablespoons
- Salt
- to taste
- Black pepper
- to taste
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, chopped
- Spinach
- 2 cups, chopped
- Corn kernels
- 1 cup, fresh or frozen
- Potatoes
- 4 medium, peeled and cubed
Instructions
- In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, approximately 15 minutes. Drain and set aside.
- Meanwhile, in another pot, cook the corn kernels in boiling water for about 5 minutes. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the chopped spinach, cooking until it wilts, which should take another 3-4 minutes.
- Incorporate the drained potatoes and corn into the skillet. Using a potato masher or fork, mash everything together until well combined but still slightly chunky for texture.
- Season the mixture with salt and black pepper to taste. Continue to mash and fold over low heat for an additional 5 minutes, stirring occasionally to prevent sticking.
- Serve hot, garnished with a sprinkle of black pepper or a drizzle of olive oil if desired.
Tips
- For added flavor, consider incorporating a splash of lemon juice or a sprinkle of grated cheese before serving.
- You can substitute spinach with other leafy greens such as kale or collard greens for a different flavor profile.
- Mokimo pairs beautifully with grilled meats or stews, making it a versatile dish for any occasion.
