Ingredients
- Cilantro
- a handful, finely chopped
- Cheese
- 1 cup, shredded (preferably mexican blend)
- Salsa
- 1 cup, of your choice
- Avocado
- 1, ripe, sliced
- Eggs
- 4, large
- Black beans
- 1 can, drained and rinsed
- Onion
- 1, medium, diced
- Bell peppers
- 2, medium, assorted colors, diced
- Potatoes
- 2, medium, diced
- Olive oil
- 2 tablespoons
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced potatoes, bell peppers, and onion to the skillet. Sauté the vegetables until they turn tender and the potatoes obtain a beautiful golden-brown hue. This should take about 10 minutes.
- Stir in the black beans and continue to cook until they're heated through, which should take about 5 minutes. Keep the mixture warm.
- In a separate skillet, cook the eggs to your desired level of doneness. For a traditional sunny-side-up, crack the egg into the skillet and cook until the white is set but the yolk is still runny.
- Now, it's time to assemble the bowls. Divide the vegetable and bean mixture evenly between two molcajetes.
- Top each molcajete with two cooked eggs. Add a generous amount of sliced avocado, salsa, and a sprinkle of shredded cheese. Finish off with a sprinkle of cilantro for a fresh contrast.
