Authentic Mole Sauce Marinade

Ingredients
- Salt
- to taste
- Dark chocolate
- 50g
- Peanut butter
- 2 tablespoons
- Cumin
- 1 teaspoon
- Cinnamon
- 1/2 teaspoon
- Garlic
- 4 cloves, minced
- Onion
- 1 large, chopped
- Tomatoes
- 4 large, diced
- Chicken broth
- 2 cups
- Dried ancho chiles
- 2, deseeded
- Dried guajillo chiles
- 3, deseeded
Instructions
- In a dry skillet over medium heat, toast the deseeded ancho and guajillo chiles until they become fragrant, which should take about 2 minutes per side.
- Place the toasted chiles in a bowl and cover with boiling water. Allow them to soften for about 30 minutes.
- In the meantime, in a large pot, combine the chicken broth, diced tomatoes, chopped onion, minced garlic, cinnamon, and cumin. Allow this concoction to come to a boil, then reduce heat and let it simmer for 15 minutes.
- Drain the chiles and add them to the simmering pot. Continue to simmer for another 15 minutes.
- Transfer the mixture to a blender, add the peanut butter and dark chocolate, then blend until smooth.
- Pour the sauce back into the pot and let it simmer for another 15 minutes. Season with salt to taste.
