Ingredients

Original recipe serves 10

Salt
to taste
Dark chocolate
50g
Peanut butter
2 tablespoons
Cumin
1 teaspoon
Cinnamon
1/2 teaspoon
Garlic
4 cloves, minced
Onion
1 large, chopped
Tomatoes
4 large, diced
Chicken broth
2 cups
Dried ancho chiles
2, deseeded
Dried guajillo chiles
3, deseeded

Instructions

  1. In a dry skillet over medium heat, toast the deseeded ancho and guajillo chiles until they become fragrant, which should take about 2 minutes per side.
  2. Place the toasted chiles in a bowl and cover with boiling water. Allow them to soften for about 30 minutes.
  3. In the meantime, in a large pot, combine the chicken broth, diced tomatoes, chopped onion, minced garlic, cinnamon, and cumin. Allow this concoction to come to a boil, then reduce heat and let it simmer for 15 minutes.
  4. Drain the chiles and add them to the simmering pot. Continue to simmer for another 15 minutes.
  5. Transfer the mixture to a blender, add the peanut butter and dark chocolate, then blend until smooth.
  6. Pour the sauce back into the pot and let it simmer for another 15 minutes. Season with salt to taste.
