Ingredients
- Bolillo bread
- 2, halved lengthwise
- Refried beans
- 1 cup
- Shredded cheese (such as Oaxaca or Monterey Jack)
- 1 cup
- Salsa
- 1 cup (store-bought or homemade)
- Avocado
- 1, sliced
- Fresh cilantro
- 1/4 cup, chopped
- Olive oil
- 1 tablespoon (optional, for drizzling)
- Salt

Instructions
- Preheat the oven to 350°F (175°C).
- Slice the bolillo bread in half lengthwise and place them cut side up on a baking sheet.
- Spread a generous amount of refried beans on each bread half, using about 1/2 cup per half.
- Sprinkle shredded cheese evenly on top of the beans, ensuring good coverage.
- If desired, drizzle a little olive oil on top of the cheese for added richness.
- Place the baking sheet in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top each mollete with a spoonful of salsa, slices of avocado, and a sprinkle of chopped cilantro.
