
Molokhia
Molokhia is a traditional Egyptian dish made from jute leaves cooked in a flavorful broth.
Ingredients
- Cooked rice (for serving)
- Lemon wedges (for serving)
- Salt and pepper (to taste)
- Ground cumin (1 teaspoon)
- Ground coriander (1 teaspoon)
- Olive oil (2 tablespoons)
- Onion (1 medium, finely chopped)
- Garlic (4 cloves, minced)
- Chicken or vegetable broth (4 cups)
- Molokhia leaves (2 cups, chopped)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and chopped onion. Sauté until the onion is translucent.
- Add the chopped molokhia leaves and sauté for a few minutes until wilted.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce the heat and simmer for 30 minutes, allowing the flavors to meld together.
- Season with ground coriander, ground cumin, salt, and pepper. Stir well.
- Serve the molokhia hot over cooked rice.
- Garnish with lemon wedges for squeezing over the dish.
