Molokhia

Molokhia is a traditional Egyptian dish made from jute leaves cooked in a flavorful broth.

Ingredients

  • Cooked rice (for serving)
  • Lemon wedges (for serving)
  • Salt and pepper (to taste)
  • Ground cumin (1 teaspoon)
  • Ground coriander (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Onion (1 medium, finely chopped)
  • Garlic (4 cloves, minced)
  • Chicken or vegetable broth (4 cups)
  • Molokhia leaves (2 cups, chopped)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and chopped onion. Sauté until the onion is translucent.
  3. Add the chopped molokhia leaves and sauté for a few minutes until wilted.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Reduce the heat and simmer for 30 minutes, allowing the flavors to meld together.
  6. Season with ground coriander, ground cumin, salt, and pepper. Stir well.
  7. Serve the molokhia hot over cooked rice.
  8. Garnish with lemon wedges for squeezing over the dish.
